Do you make all the sausage? What temp does the smoke chamber get too? Is it hard to regulate?

I'm keeping the temp between 170° and 180°, regulates easy, when temp starts getting a little high I just crack open the top of the stove.
Yes we made the sausage yesterday. We ground 118lbs of meat total including burger.
