For those who didn't like my instant-food elk hunting spaghetti recipe, here I have a better one. I ate something similar made from wild pigs which was delicious.
- Thawed a leg roast from an elk calf shot last season
In a cast iron dutch oven, put
- The elk meat
- Some ground garlic
- 1/2 onion cut up
- Sprinkle bbq rub all over everything, more is better
- 1/2 bottle of red wine
Cover, put in 225 oven at 9 pm, and don't touch it until the next morning. I shredded the meat with 2 forks, and added a bottle of BBQ sauce (next time, I'll make my own BBQ sauce). I heated it up and cooked for a while to allow the sauce to mix in.
Lunch today, and the rest into freezer bags in meal-sized portions.
Shot it, cleaned it, hiked it out, butchered it, cooked it and now ate it. Gotta love it
