What catfish does everyone think has the best flavor? For me, it is hands down, the Op (aka: Flathead).

This, except we call them yellow cats. Channels go back in the river when you have yellow cat. Blues are good too, just need to trim up well.

Any of them caught out of the brazos. Besides channels being a little bit greasier they all taste the same to me if fried up good.

Since my wife and her family have been in the Catfish business for 32+ years and I’ve been in 12. I’m kinda partial to ours.
Farm raised, fresh and never frozen.
Whole catfish has best flavor imo.

I don't really have a preference. Yellows..blues..channels, I eat em all! The cibolo creek close to where I'm from is loaded with channels, so I've eaten those more than any other fish and have never had any issues. Those 1-3lb fish are great!

They're all pretty good, but the belly steaks of an op that'll weigh over fiddy pounds is pure food for the gods... There's nothin' like it this side of heaven with either a corn meal batter or beer batter...

The belly meat off a flathead is pretty darn good. The younger they are the better eating in my opinion. White belly meat taste totally different then the red fillets that come of the rest of the fish. I'm not a big fish eater anymore, I just used to chase the big cats on trotlines back in the day.....
