    Going to fire up the UDS

    tomorrow afternoon. Going to smoke some sausage, ribs and 2 whole chickens. Using charcoal and hickory. Rubbed the ribs with mustard then put some homemade rub on them(salt, pepper, paprika, garlic powder, and a hint of cumin). Injected the birds with melted butter, Tony C’s and Rebecca Creek Whiskey, then put some of my rub and some Earl Campbell’s BBQ rub on them. Ill post pics as they smoke tomorrow.

            Good idea

            Picked up a worn out Webber kettle of $3 at a garage sale last weekend

            Adapting my UDS to have Webber lid, more room for an extra rack level or standing chicken

                Chicken been on for 40min, ribs 2.5hrs at 275ish. Just mopped the ribs with homemade moppin’ sauce.

                      Chicken was juicy. Kinda bland. Will brine or buy some Tony’s injectable next. It was good tho.

                        Looks awesome, UDS is about the only way I do any of my outdoor cooking now days.

                          Brining helps the chicken but don’t brine too long. Four hours works well for me.
