    Shiner Bock Buffako Roast

    As luck would have it I was digging around the deep freeze and found a buffalo roast that I forgot I had from a buffalo I had shot a couple of years ago. Thawed out roast and was fine no freezer burn. Yea!
    Decided to smoke it. Injected it with garlic butter and herb marinade and saltlick seasoning on the outside. Then brined it over night in a bag with Shiner Bock and a little brown sugar.
    Going to smoke this low and slow 225 over pecan wood and pecan hulls to a nice 132 to 134 and then pull it. Hope it turns out good.

          Well it came out good. Not dry which I was worried about.
          Had some twice baked sweet potatoes and smoked corn on the cob.
          Made Coaches Wifes jalapeno cream sauce recipe to go with it.

                Nice sauce! Roast looks good too! I've never had buffalo. One of these days...
