The first bite Coach took of these Gyros, the only thing he could say was, "Holy Crap," and then he polished off three of them. So I take it he meant that as a compliment.

And not only are these delicious, they're perfect to make ahead and keep in the fridge if you know you have a busy night coming up, or if you just want something different to take for lunch one day.

It was great. My wife loves them. She said it's something that she'll crave. She loved how fresh it was. I put the leftover cooked meat in the freezer for next time. Thank you for the recipe.
