I use the same method. Been doing it for a couple of years. Sure does make some good BBQ. Looks good now I may have to fire up the smoker this weekend. Going to be nice and cool and my Longhorns have a date in Big D.

Masterbuilt... hard to beat from a pure efficiency standpoint (only 8 hrs for large brisket)

What temp do you cook at? I have a MES40 and it still takes me almost as long as my stick burner did?
