marinated thighs over mushroom spinach
since friend Russ mailed me his curry mix
and got me into playing with "tandoori" chicken
marinating in plain yoghurt
this marinade was a mix of-
1/4 cup Italian dressing
1/4 cup plain yoghurt
the juice of 1-lime
1-Tbsp of curry seasoning
1-Tbsp of Mrs.Dash - salt free
over night in the fridge
"brushed off" the marinade
then re-seasoned with the Mrs.Dash
direct roasted at 8" over the coals on the OldSmokey
the cremini mushrooms sauted
fresh spinach wilted in the skillet over the mushrooms
big pat of butter
one of the best thighs over spinach dishes i have every had
