            It was fantastic. We had a neighbor kid over and after he had wiped out the 1st plate, I said “so you like Sandhill crane?” He looked at me confused and said, I thought that was steak, Mr Shults!

            I’ll admit I cheated on the gravy and used a packet.

                  I’ve always heard good things about Sandhills... did it require tenderizing at all?? What temp did you cook it to? Medium??

                    No I did not tenderize. In retrospect I would have, but only to make them more “finger-like” rather than cutlets. Sliced the breast across the grain and it was plenty tender. And yes cooked to about medium or medium well
