Get a big enough metal barrel, tilt it so that it holds enough water to submerge pig in. Build a fire at the base and get water boiling, lift pig and submerge in the water until skin begins to turn pink, immediately hang pig and begin scraping. I forgot to mention that the pig is still whole, not field dressed. Might be a good idea to do this in camp before the pigs starts to spoil.

What is the advantage of leaving the skin on?

Juices. The skin will seal in all the juicy goodness that usually leaks out during cooking
