    Anyone sous vide ribs?

    Thinking of trying sous Vide on some Nilgai Ribs. Curious if anyone has done and how? Temp? Time? Grill?

          Kenji is like the god of meat knowledge. His steak, prime rib, sous vide, corned beef, and chili articles are fantastic.

              I've reheated ribs with this method in vac seal bags. Best way to reheat in my opinion. Never cooked them like that though

                Ok, so 1st time Nilgai sous vide ribs.
                BIG DISCLAIMER, got a jack wagon that works for us, my dad had him split two sets of ribs. He(Pancho) cut like we were doing tablitas, not into two sets of slabs.
                -I thawed out&seasoned w Salt Lick Garlic Rub. Ziplock back overnight.
                -set Sous Vide cooker 160' for 12
                hrs.
                -finish on grill

                My Review:

                -Salt Lick rub, made meat spicy(I eat spicy, but not what I was going for on this).
                -Meat was tender enough, but the Nilgai has zero fat so there wasn't a softness there.
                Overall really good meal!! I'll do again lucky to have a few more ribs to try different stuff on. Also Pancho deserves a kick in the nads. I wanted slabs **** it!! Lol
