Today is gonna be a good day. . .

There may or may not be some beer drinking going on in the near future.

    That is all. Happy Sunday.

How long will it take on that cooker at 225°
Post up some pics when you cut it up.

We did the same thing yesterday. Hard to beat smoked brisket and homemade baked beans. Not the best plating but no one complained.

        Heck yeah!

I’ll be putting a turkey on my Kamado here in a bit. They turn out tremendous.

I’m shooting for about 8 hours but have a window of up to 10. Been a while since I’ve done a full brisket so will be playing it by ear.

I’ll be posting pics as the day goes on for sure.

I can’t remember the brand but it’s mesquite lump. Bag got went so it’s in a bucket in the garage till I finish it.

I been using B & B but it's hit and miss on the size of lump.
The bigger pieces seem to hold temp steady better.

Yeah this bag started out good and then got smaller it seems. I may start “culling” the lump to avoid these problems when I cook. Depends on how motivated I feel haha.

I use B&B as well and noticed the exact same thing. Basically I just use the lump to get the fire going and use pecan or mesquite chunks to keep things going, adding more when necessary.

Raw wood, the actual HEB Smoking Chunks to be exact.
