Ranch twice baked potatoes
2.5 lbs baked potatoes
1 pkg dry ranch dressing mix
Butter
Sour cream
Grated cheese
1pkg bacon fried and crumbled
Salt and pepper to taste
In big bowl mix potatoes, ranch dressing, butter and sour cream(I don't measure the butter and sour cream just use enough to make potatoes creamy). Put all of that in a baking dish cover with grated cheese and then crumbled bacon. Bake at 350 until cheese is melted and potatoes are reheated.
Tater Tot Casserole
2lb pkg of frozen tots
8oz sour cream
1 stick of butter
1 can cream mushroom
1 pkg grated cheese
Salt and pepper
Melt stick of butter and mix with sour cream and cream of mushroom. Put all tots in a baking dish and cover and mix with butter, sc and cream shroom. Salt and pepper to taste. Bake at 350 for 20 minutes then cover with cheese and bake another 10 minutes.

A favorite of mine is roasted butternut squash. I cut mine smaller and roast a little longer than most online recipes say just cuz I like it a little crunchier and sweeter. I sometimes add a little brown sugar to sweeten but it's really not needed as the squash will be a bit sweet after roasting anyway.
1 butternut squash halved and seeds/innards removed (a half makes enough for 2-3 people)
The following spices are to taste so just mess with it some to get it how you like it
rosemary if you like it (I dig it)
salt
pepper
brown sugar (will help to sweeten but not needed)
olive oil
Cover metal baking dish with foil (makes cleanup much easier).
Cut squash into small cubes, around 1 inch or a little less.
Coat with a light drizzle of olive oil, add spices and a few pinches of brown sugar and mix to coat evenly with spices.
Roast at 400 degrees for 35-40 mins. Mix squash around once at the 20 min mark.
I love this stuff with chicken, pork or beef.

Green Bean Casserole:
3 cans green beans
1 can cream of mushroom
a little milk to mix with the mushroom soup
3 thin slices of velveeta cheese (or more if prefered)
dash of black pepper and salt
big can of refried onions
Drain the beans, add the soup and milk, mix together, season with salt and pepper.
Put cheese on top, put in oven or microwave to heat and melt the cheese. Mix together
And then put onions on top, put back in oven to brown the onions.

I did this as my side for the cooking show that I was on,
Smothered New Potatoes
1.5# bag of Red New Potatoes
1/4 cup olive oil
2 slices of a med onion
1/3 stick of real butter
Kosher salt
fresh ground pepper
1 lrg sprig of fresh chopped Rosemary
1/2 cup water
Slice potatoes in 1/4" slices. Sauté onion slices in olive oil over medium/high heat. Add potatoes, Rosemary, butter and water.
Salt and pepper to taste
Bring to a slow boil, cover and simmer until potatoes are tender, about 20-25 min.
