    Which do you use?

I tried binder the first time I made smoked sausage because the instructions called for it (Zach's smoke sausage recipe.) I honestly couldn't tell that there was binder in it; which I considered a good thing. I have thought about omitting it, but I still had some and just decided to use it again (and again, didn't notice that there was a binder agent in it.)

This is the binder I used:

Awesome write up, we started doing our own link sausage two years ago and its a ton of fun. I'd love to get into making summer sausage too.
