Marinate in a cooler with some Italian dressing ,onions,garlic, bell peppers and squeeze three oranges in there. Pull it out and rub it with some Zachs sweet rub and smoke it at 250-300 for about 4 hours. Then wrap it up in foil and and finish until internal temp is around 145f. Rest it for about 20 mins and serve.
Dry rub of choice
Smoke @ 250 for 1 1/2-2 hrs
Wrap in foil and finish in oven @ 250-300 for another 2-2 1/2 or until done
Add bbq sauce of choice and tent loose to rest
