        What's the secret to cooking chicken over direct coals mine never looked like that so I've always used my pit with a firebox.

          if you cook on a Weber the grill is 5" over the charcoal grate
          when the chicken drips it's close enough to get flare ups and burn the food
          with the 22"OldSmokey the fire pan is 8" below the grill
          which is just high enough that the drips don't flare up to the food
          and the temp at the grill is still over 300° giving you that great skin

            I've never had a smiokey since I couldn't grill we built BBQ pits with firebox thanx will check in

              to know... OldSmokeys are built by the Burkhead Manufacturing Co.,
              in the same building in downtown Houston since 1923.
              the Jamison family bought it from the Burkheads in the 70s.
              it's run by the middle Jamison brother now.
              not just made in the US. not just made in Texas. but family run in Houston since 1923.
