    Turkey Stroganoff

    Tried this last night and was very happy with it. A little time consuming precooking the turkey and noodles but very simple but is a good use for the less tender parts of the bird.

    Turkey leg/thigh quarter
    1 medium sized onion, chopped
    2 cans cream of mushroom soup (low fat/healthy choice if desired)
    small can of mushrooms
    3 ozs Cajun Injector Honey Bacon BBQ marinade
    9 oz (uncooked) wide egg noodles
    optional to taste
    can of sliced water chestnuts, chopped
    cheese (either mixed in or as a topper)
    fried fried onions (topper)

    Boil turkey leg/thigh quarter and pick the meat off the bone and cut up into bite size pieces.

    Cook egg noodles and drain.

    Combine all ingredients in casserole pan and bake, covered, at 350 for an hour.

    Added water chestnuts for a little crunch.
    Can add cheese or french fried onions as toppers if desired.
