Do you wrap them in foil after a certain time? Will they get “bark” on the edges doing it the way you are? I’ve always wanted to try one but didn’t want to risk screwing up a good piece of meat!

I have not had to wrap anything I cook on the Joe.
Always get good bark and good smoke ring and they are always juicy.
