Finally got around to making my jelly this year . Made something new . I have been hearing about corn cob jelly so I had to give it a try . We made 64 quarts if cream corn a few weeks ago and I kept a bunch of cobs to make jelly . I boiled 12 ears in 8 cups of water then strained the liquid
I added a cup of sugar for every cup of liquid a pack of pectin and 2 table spoons of lemon juice .
Slowly brought up to a rolling boil and a
Then canned it .
Turned out a honey color and tastes alot like honey .
Next up was my fig/ strawberry
Used 3 cups of fig3 cups of strawberry and 4 cups of sugar and a pack and a half of pectin . Brought to a boil then canned it .
Turned out pretty dang good . I had a few helpers too
