1 large head of cabbage
1 med sweet onion
4 strips of boar’s head bacon
1 cup of vinegar
1 cup of h2o
1 table spoon of brown sugar
1 table spoon of sea salt
1 table spoon of real maple syrup
Boil vinegar, water & brown sugar for a few mins.
Brown bacon, when bacon is about ½ finished add vertically slice onion & syrup . When the bacon is just about done remove it and let it sit aside for a while.
Add the cut cabbage and dressing. Let it simmer for a good 45 mins or so. Tossing it every once and a while, add salt. Toss in the crumbled bacon if you want it.
We add boiled gold potatoes and sausage to the mix.
This is my mommy’s family recipe. She also makes the best cabbage rolls in the world!!!
