    Oak for bar b que

    I know that alot of people use oak for cooking.

    My question is which oak do people use?

    There are so many varities, not all of which I can identify.

    Post, Red, Water, Live, Blackjack, I think thats all I know.

    I use post oak.....have tried the blackjack and liked it as well

      Post oak and live oak is what is in my area. I would use any oak

                  Post oak and Live Oak. I stay away from the blackjack. Have tons of it at my place but use it for firewood and not for cooking.

                        RED OAK!! this is used by many of the top bbq'ers. The texas monthly that list the top bbq places reported what wood the top q'uers used and most were red oak.

                          If I spend time to split wood its red oak and hickory. Red oak stacks better and splits better and I prefer it to all other oaks...followed close by post oak. hickory burns HOT and leaves good coals..it stacks like @#^*, and is very stringy when splitting.

                          Post oak splits fair and stacks fair, its a good choicer as well. We dont have mesquite here but I cook with it out west. I like the flavor, but it gives me a headache almost instantly. and I never have understood all the rave about pecan... nothing wrong, just nothing special (IMO)

                              I work at a saw mill, so I see it all come through. I don't split large amounts, but try to keep wood at different age of season. It use to be strait hickory, now mix with red and post.
