So, i took inspiration from the boudan pork tenderloin recipe thread and some other pork tenderloin threads and smoked two tenderloins.
The first one I stuffed with spinach, mushrooms and gouda cheese:
The second one i stuffed wtih bacon, a pork sausage with cherries and roasted chipotles, and pepper jack cheese and then wrapped it in bacon. I seasoned with some rib rub, garlic salt, brown sugar, and honey:
I overcooked them a little bit, but the flavor was good. My wife liked the one with spinach the best. I made the mistake of using maple syrup bacon, which made the bacon wrapped one a little too sweet. next time i will use regular bacon. when i took the bacon off it tasted great.
