What you've made looks great! I'm concerned about smoking the rest of the sausage for several days. I hope it has lots of cure in it. When I've made "dried sausage" "Hunter sticks" etc. I would smoke them then place in a dehydrator. I'm interested to see how yours turn out.

We sure could have used your help. It was just 4 of us. First Sat in March Uncle Bill and Steve are making theirs. Come on down. As far as them being famous, Smart is the only one paying attention.
