    Fried Christmas ham

    Yes sir! One of my favorite uses for leftover Christmas ham is to fry it up for breakfast with eggs and hash browns! Ham is underrated as a breakfast meat with sausage and bacon stealing all its glory.

    By the way this is just “normal” ham, not “cowboy” ham!

                or put it in a big pot of red beans to go with that Brisket for new years which is what will happen at our casa.

                  Country ham is big for breakfast in North Carolina/Virginia. Add some red-eye gravy, grits, couple of over-easy eggs, some stewed apples, and biscuits and you're all set. Add a cup of cowboy coffee and you're in heaven.

                    Yes sir! A big, thick cut piece of ham with fried eggs, toast and coffee is one of my most favorite breakfasts.
