    Axis cutlets?

    We were given some at a Christmas party and wife is looking for recipes.

    What is your favorite way to cook axis?

    It's very important this goes well.... I've got my first axis hunt planned pending her liking dinner tomorrow night.

    Marinate in olive oil, kosher salt, fresh cracked pepper. Grill em rare!!!

      I posted this recipe a few yrs ago ... very simple



      I would do something like a seared elk medallions , covered in Pontchartrain sauce with capers, garlic rosemary mashed potatoes, and grilled asparagus / squash / zucchini


      coat medallions with olive oil , dash of sea salt, and fresh cracked black pepper corn

      heat iron skillet on med/high , add butter and canola oil

      add medallions and sear all sides brown ... won't take long

      remove meat, and set aside to rest

      add heavy cream and creole mustard to skillet - cook down till sauce thickens. Then add capers and a tsp of butter. Season with Blaze , Drizzle sauce over medallions

      asparagus wrapped in bacon and mashed potatoes easy to fix

      should resemble this

        Looks awesome B!!

        We cook them down in the magnalite with brown gravy and serve over rice. Axis is really good.

          We did as directed for the most part and they turned out great. I probably overlooked a few pieces.

            chicken fry rocks, just browned some in a pan @ fire station, didn't last long...
