    Pronghorn beans????

    Bout to try my Dads (Hispanic lady that helped raise him) bean recipe! Instead of venison, Im going to substitute with a Pronghorn I killed this year. Any suggestions? Even the guides in Wyoming told me take the meat and brown in a pan with a rock and then throw the meat out and eat the rock lol. So far the breakfast sausage is pretty darn good. Hope it works with beans, if not it will be a bad Christmas Eve supper.

    My New Mexico antelope from this year was very good. I've eaten both tenderloins and one of the backstrap and. A bunch of sausage. All very good, I served the backstrap to my family who has some that aren't crazy about game meat and they ate it up, from my pregnant sister inlaw to my 5 year old nephew. I didn't do anything special, just salt and pepper and on the grill. Don't overcook it and it's good. I wish I hadn't ground or made sausage with everything but the straps and tenders.
