    Jambalaya for 850

    My buddy and I have had the privilege to cook for the last two LSU/A&M games that were played in Baton Rouge. This past year, we cooked for 850, maybe some of you made the game and got to eat some of my jambalaya. I was in Tractor Supply in Baytown on Monday and the clerk and I got to talking and come to find out, she was there and had eaten some. We also grilled some sausage and served them on tortillas. One of the A&M Alumni owns a sausage company, so they supplied the sausage.
    Here's the ingredients
    240 lb meat 80 pork, 80 chicken 80 smoked sausage
    120 lb chopped onions
    36 lg bell peppers
    2 gal of minced garlic
    5 lg Tony's Cajun Seasoning
    125 lb of rice

    That right there is a pot my friend, and some good looking groceries.

      I'm going to make that this weekend. Sure hope the leftovers freeze well. I'll have enough aside for 848 people.

          4-10" banjo burners. I use a 25 gal propane bottle to supply it.

          Jambalaya freezes well. I've found the best way to heat it is to use a steamer pot.

          I like to, before adding the rice, take some of the meat and juices out and make a poboy sandwich with it.

                Mr Dennis, what you doing in Texas? Also, Did you buy that camp at Russell's Landing, live there?

                    friend of mine created a Jambalaya Calculator that you can download and confirm recipe/ingredients from an xcl spreadsheet

                    plug in your # of servings and it gives you total amounts for everything !

                    IMO, make enough to serve 20-30 people as your party of 10 will want 2 bowls each , and to take some home

                      I was there getting my my gyp bred to my old Lacy male, ended up, the guy that had my old male, let me have him back. He's a blood tracking machine. I haven't bought the place yet, but we stay there. I'll retire Feb 23 and plan to sell out here and build a nice house up there. I'll be able to duck hunt out my front door, fish out the back and deer hunt to the side, lol.

                          110 gal pot. A welding shop made it for the fire dept and my buddy and I made the burner.
