                That's a New Orleans style jambalaya. Magnalites are the next best thing to cast iron for cooking a jambalaya in.

                I cooked this, 110 gal jambalaya, for the A&M Alumni for the LSU/A&M game this past season. I hadn't finished steaming the rice when this was taken.
                I had 240 lb of pork, chicken and sausage
                120 lb onions
                125 lb rice
                6 lg containers of Tony's seasoning mix
                1 gal of minced garlic
