        We got 270 lbs with room to spare.....more than you and I ever did that's for sho

                  Smart,heres a question tho, when you talk of good timing for low humidity, what kind of numbers are we looking for?

                    Awesome job. Can you post your pork/venison ratio? Pork fat or butts? I made some snack sticks and they came out way too greasy

                        60 pork butts 40 deer on link... 50/50 on snack sticks.

                            Got mine basically done. Also built a really nice firebox. With all the wind it looks like the smoker will need to be skirted. Started a for today to season the firebox to get it ready for some sausage in a few weeks.
