I have been using that recipe since the early 80's so that is a possibility. I have been told they get better after I had made a few pitchers. I have to drink some from each batch for quality control and usually after a while I stop measuring and just start pouring in the Tequila.

Thanks Jason. We are making boudin this weekend. I'm probably going to make a batch with 60-70 lbs of meat which should make over 100 lbs of boudin. Of course I'm going to be selling some of that to help pay for our Bownanza weekend.

Meat pies may also be assembled this weekend but that isn't as definite as the boudin being made.

Meat pies WILL be assembled. No doubts. And whoever wants the recipe can have at least the major ingredients. It took me dang near 12 years to find the recipe and it'll take all you sneaky people that long to pry it from me!

Getting the water hot and the meat and veggies are already cut up.

We should end up with about 100 - 110 lbs of boudin but not all of that is for boudin balls. I have a few folks up this way that reimburse me for the cost of making boudin for them. I guess instead of the tamale lady, I'm the boudin boy.

More updates as the process moves along.

Sorry for the lack of updates but when my hands started getting greasy it was too cumbersome to make posts. Here are a few from along the way.

We kept about a 1/2 bus tub loose for boudin balls and added a little extra seasoning to give it more kick.

We have 5 gallon bags of loose boudin to turn into boudin balls. That's somewhere between 15 and 20 lbs plus almost 4 lbs of stuffed boudin for the grill. We also packaged a little over 60 lbs for distribution via donation.

And I forgot to mention we made the loose boudin for the balls a little spicier. It shouldn't burn you the next morning but a cold beverage will be mighty nice with it.

Sounds good brother. I can use it for the boudin balls and let Kelli run the big one I am bring for her meat pies. I should have enough oil for both of them.

I sent you a pm last night brother, not expecting it to all be gone so quick. I'm sorry to say I don't have any left, not even for the family and me, to bring to Nanza. Your daughter will sure be able to eat her fill helping us though.

A big Thank You to the crew that helped make this so much fun. The ball rolling crew made short work of turning the boudin into the boudin balls. Without y'all it would have been more work then I care to think about and I hope y'all are willing to do it again next year.
