Default Team Meat Pie - Don't call it an empanada!

Okay folks, my wife, Kelli, has decided to make enough of her amazing Natchitoches style meat pies for Bownanza to have her own team (with approval from Mary). We will also be frying up the boudin balls in our area and will hopefully find a little pit space to smoke some boudin. All are welcome to help out but the meat pies will be made up before hand and only need to be fried on site. We will be rolling, battering and frying boudin balls too so extra hands will be welcome for that process.

Here is a list of items that I can think of that we will need and we are willing to take donations for the expense of the ingredients to make the meat pies and boudin.

Meat Pies: Kelli (Mrs. I stayed in the room so I didn't get stuck in the elevator)
Loose Boudin (about 30 lbs): Lemmeout
Stuffed Boudin for smoking (about 10 lbs): Lemmeout
Fryers and propane 2: Lemmeout x2
Oil (several gallons): 1 large bottle-Lemmeout;
Foil Pans (8-10): Kelli and Lemmeout
Paper towels (3-4 rolls):
Flour (3 bags):
Corn Meal (1 bag):
Eggs (18 count):
Milk (half gallon at the most):
Seasonings for boudin ball dredge: Kelli & Lemmeout
Knife & cutting board: Kelli & Lemmeout

And from talking to Smart, it sounds like they are going to work us into the Team layout over by where they are.

I think we will be good. My dad has an awesome fish fryer that I will be borrowing plus I have one of the academy single burner fish fryer sets with a basket. Team Wing will be right next to us with a fryer set up and Gator won't be far away with theirs either.

Kelli, aka MeatPieMama, made the meat filling for the meat pies last night. It sure smelled good and the small sample I snuck tasted spot on to a Natchitoches Meat Pie.

I'll volunteer to bring a 3 gallon jug of peanut oil (or what ever oil y'all prefer) and the roll of trashbags. That way it'll be less a couple of things for you and Kelli to worry about. I've got to go and pick some up anyway for the Granger Extreme hunt next weekend.

I have access to the Restaurant Depot here in Austin and was going to get one of the 35 lb jugs of oil there. The 35 lb jug is about 4.5 gallons. Kelli had talked about maybe frying in lard. The clear fry shortening is about $18 and the peanut oil is about $33 for the same size jug which means it would be less expensive to use the lard and the added bonus of the lard having a slightly higher smoke point.

The last time i looked at HEB or Walmart the 3 gal jug of peanut oil is about the same price as 4.5 gal at the restaurant store.

Heck, if you want me to, I can pick up a jug of the clear fry oil for you for the Granger hunt.

Sounds like you can get a better deal from the restaurant store. I say go that route then. I'll still bring the trash bags, will pitch in some dinero, and help Jake handle the balls. Lmao. As for the Granger hunt, I appreciate the offer, but the oil gives me a good excuse to go to Academy too

She has told several people she will but I have yet to see her do it. Lol. Part of that maybe because she was winging it the last couple of years and going by taste to duplicate the meat pies we get at Lasyone's.

She recently found the recipe that her grandmother used, that is supposed to have come from the family that owns Lasyone's, so she might actually share it now.

Sounds good. The Restaurant Depot is right behind the Academy at 183 and I-35, which are both close to where I work, so I get to hit both. The first time I went to this store I was like the teenagers that snuck into Porky's. For Pete's sake, you can buy a whole, skinned, cleaned and gutted goat that is ready to be butchered there. I don't even like goat meat and that amazed me. Lol.

My 15yr old daughter Audrey loves boudin. That girl will fight someone for the last piece of it. I swear that girl is part cajun. Boudin and crawfish are her thing. Lol
I asked her if she wanted to volunteer to help yall and she said "heck yeah" as long as I get to sample it.

So if you guys need another helper she will be ready. We will donate some cash to help out with expenses. She'll be wearing a Team Mudbug shirt though.
