We are out this year because it moved back to spring break.





But I have done a fair amount of work to GJ's pit "Big Boy" so hopefully he can pick up the slack!

Sorry you guys can't make it this year. One of the most impressive things I have witnessed in all these years of rib smoking is the way you guys attack a task.

Man, I hope this works out. For several years I was present for the daybreak "lighting of the pits". Livestock show season has gotten in the way the last several years. If there, you can bet I'll be ribbed for her pleasure.

Here is my best guess on the ribs as prices go up and down.

Today I can get them for $2.97/pound, 3 racks weigh roughly 9.5 pounds.

72/3=24

24*9.5=228

228*2.97=677.16

$677.16 if I bought them today and all my math is right.

Getting close! Big boy is in the booth for a sand blasting and a fresh coat of paint so he will be nice and shiny! I'll pick up the ribs middle of next week and make sure they have a good freeze on them!

Dang, called this morning and the price of baby backs was up to 3.98/lb wish oil would go up like that.

Just a suggestion, back off on the number of ribs we do and add 4 or so Pork Butts.

Would help keep price down and get everything off the pit at the same time.

Spare ribs would also reduce the cost some.

By the way over the weekend I met a new contact with Sysco so I'm hoping I'll get them back down to less than $700.

I'm bringing my shade as well. I also bought 2 20X10 tarps that can serve as sidewalls just in case.

I'll make a charcoal and hickory run. We need mature fires.

I'd like to stick with tradition on the 72 number of racks but I'll defer to GJ since he's the buyer.

I'm brining unicycles but word of caution, they do break when operated with liquid courage. Just ask William and Randall.

Maybe consider St. Louis Style ribs. They are usually meatier and less expensive than baby backs and the cook time isn't that much longer. The restaurant supply store price I am seeing right now is $2.89 per pound for them versus $3.02 for baby backs. You should be getting a similar, or better price, than that through Sysco.
