    axis and hogs....whats your favorite recipe?

    i am hitting texas again april 1-3 at keith johns outdoors in hopes of some more hogs and fill my quest finally for an axis buck. i have heard axis is awesome table fare and i have ate many texas porkers. whats your favorites for these critters, maybe i can give new recipe a try, i am thinking of shhoting some real small hogs this trip and smoke the whole things, what do you think?

    try this recipe for your axis backstrap


    For your pork, take a hind quarter, season w/ garlic/ pepper seasoning, onion powder and brown sugar. Smoke over pecan wood at 245 degrees for 2 -3 hours. (depending on size) Tightly wrap hind quarter in tin foil. Cook for another 1-2 hours. Meat will fall off the bone when it is done.
