My son brought back a bunch of sand trout fillets from a fishing trip to Galveston this weekend. He vacuum sealed and froze them. Thawed them out today and fried them using Tony's seasoned fish fry. Man, they were good. The meat was not mushy at all. If you need to freeze sand trout fillets, vacuum sealing is the way to go.
