Male bovine...you can tell by the angle of the femoral neck and the location of the greater trochanter. Looks to be Charolais or Charbray based of the exposed trabeculae.

Hard to tell, but based on first pic I think it is smaller than adult bovine. Then the pic with broom has me second guessing size
