    Skillet Breakfast Casserole ~ Breakfast

    Skillet Breakfast Casserole

    1 pkg. Pioneer Sausage Gravy
    4 cups tater tots
    1 tbls vegetable oil
    1/2 cup sausage, cooked and crumbled
    1-1/2 cups water
    2 large eggs
    1-1/2 cups cheddar cheese, shredded
    1 tbls green peppers, minced

    Preheat oven to 350*. Heat oil in a 10-12" oven proof skillet. Brown tater tots 3-4 minutes, remove from heat; evenly sprinkle on sausage and green chile peppers. Whisk gravy mix into water. Beat eggs into gravy mix. Pour evenly over tater tots. Bake 25-30 minutes. Sprinkle on cheese, bake another 3 minutes or until cheese is melted.

    Makes 4-6 servings.

    Here's Another Breakfast Casserole

    1 lb. bacon, sausage, or ham cooked and drained
    1 Pkg hash browns
    8 Large eggs beaten
    1 can Rotel
    1 can cream of mushroon soup
    1 small container sour cream
    1/2 lb grated americann cheese
    1 small can evaporated milk or whipping cream

    In an oven safe casserole layer hash browns, meat of your choice
    mix the eggs, Rotel, soup, and sour cream, and milk and pour over meat and potatoes, spread grated cheese on top and bake covered at 325 for 45 minutes and remove cove and brown cheese and let sit for 15 minutes and serve.
    This dish can be put together the night before and placed in the fridge and baked the next morning.
