Tripod Stand Height for South Texas

I won a Chap hunt so instead of dropping $400 on a Millennium Tripod I'm building my own..

I guess my question is what is a good height (as far as where my butt will sit)? 5 feet? 6 feet? 8 feet?

The Millennium is about 6'...

When I was there, many years ago, a guy had a 6' and it was perfect.
