I made this bread a couple more times. I found that I was “mixing” the dough too much initially. It turned out much better when i “folded” the dough together rather than mixing it. Also, I added a very small amount of real maple syrup and a pinch of dark brown sugar. I’ll be giving this out during the holidays to friends and family.
Yeah the first loaf you posted a picture of did look a little more "uniform" than it should be. Still looked delicious though.

Tastes just like the Shiner I made it with But it gives me GREAT ideas to use this as a base

It also reminds me of San Francisco sour dough bread

One tip is to slice it in thick slices then stick it in the broiler so it dries out and gets crunchy like toast

This is good advice right here. Goes great with breakfast.

Also next time I'm going to omit the egg
Read around and other recipes don't use it

This recipe is more of a cool edible science experiment I can do with my kids than something purely to eat

Also the density of the bread feels like a loaf of banana bread

          I like it!!!!

Add bacon bits and shredded sharp cheddar cheese to this and see what happens!

Yup. Also let it sit overnight then use it for sausage sandwiches the next day. [emoji6]

Glad to see this pop up, made me think of my old bud and fellow gizzard enthusiast JP.

                            Rest easy, old friend.

Just seeing this for the first time. Must try it with Dale's jalapeño addition. Sounds amazing.

                              Resolution? What resolution??
