A lot of you liked the Enchiladas Verdes we shared over a year ago. I finally got around to writing about our other favorite enchilada: Authentic Venison Enchilada. The recipe includes an authentic homemade red enchilada sauce plus tips for rolling enchiladas without tearing the tortillas. Enjoy!

Glad you posted this. I made pull pork tacos on Saturday, have plenty of pork filling and corn tortillas left so I am thinking some pork enchiladas.

That would be awesome. Pulled pork is good with the Enchilada Verde recipe linked in the recipe. I love them both, it'd be hard to choose!
