Default Smoked alligator

Been in the smoker for about 6 hours so far. Brined in salt and crab boil for 16 hours and wrapped with 4 pounds of bacon.Name:  IMG_2988.jpg

Dang, that's looks good. I had it once known as smoker, no bacon just tail, it was chewy.

Came out amazing. The meat pulled off the bone with no effort and zero chewiness. We will be doing it again soon. My brother has 3 more in the freezer.

Was that a whole small gator from "neck" down or just a tail? It's hard to tell from the pic.
