    Enchilada Hog pie

    Wife made this tonight and it was awesome.

    Make a broth from smoked hog bones. I had smoked a ham and shank the day before, then overnight made a broth with the bones using salt to taste, 2 tbsp black pepper, 1tbsp cilantro and basil, 2 tsp oregano.

    Use some of the smokef meat mixed with red beans, corn, onions. Add cumin, chipotle pepper.

    Using the broth, make an enchilada sauce in a skillet heated with oil by mixing broth, tomato paste, chopped garlic, chopped onion and hot peppers if you want (1 1/2 yr old cant take any heat). Let the mixture brown and start to reduce a little. Add cumin, cilantro, salt, pepper, and paprika. I like to add a little corriander.

    Mix the meat mixture and enchilada sauce in the skillet. In a sauce pan make a tamale crust/sauce using 1/2 cup broth, 2/3 cup corn flour or masa, and 1 or 2 slices of cheese. Can add some salt n pepper. Mix it and cook it into a dough, almost like making grits. Pour it before completely reducing down, over the top of the skillet contents.
    Bake it all in the oven on 375 for about 20-30 minutes.
