    Stuffed Shrimp recipe and BBQ results

    Last weekend we were in a BBQ cookoff and one of the jackpot entries was seafood. I made a sampler plate of several things but the recipe I used for the shrimp was out standing and very easy. The recipe calls for 1lb of crab but I used 8oz of crab (thats all I had) and 8oz of chopped shrimp. Ya'll give it a shot and let me know what you think. BTW I took 3rd in the seafood!

    Ingredients

    1 pound crabmeat, picked free of shells
    1/3 cup crushed crackers (recommended: Ritz)
    3 green onions (green and white parts), finely chopped
    1/2 cup finely chopped bell pepper
    1/4 cup mayonnaise
    1 egg
    1 teaspoon Worcestershire sauce
    1 teaspoon dry mustard
    1/2 lemon, juiced
    1/4 teaspoon garlic powder
    1 teaspoon salt
    Dash cayenne pepper
    Flour, for dusting

    Just butterfly the shrimp cover with the stuffing, dust in flour and deep fry!

                  Nice pit! is that an outside area for grillin or skillet cooking? If it is great idea to incorporate that into your pit Got my wheels a turning for my next one.

                    Yeah, it's an "outside" fire pit next to the fire box...

                    In the back is a griddle/tortilla warmer. Underneath the griddle (which flips up for access) is a stainless steel vessel for injecting steam into the smokebox...the coals boil the water to make the steam in front of that is an adjustable/removable grill...also good for adding coals to the firebox instead of wood for "quick" heat...

                    I think I've got more pictures posted on another thread...I will try to find them...
