    St. Louis vs back ribs

    Kroger has back ribs on sale a couple weeks ago so I bought a few racks. I’ve only ever smoked St. Louis style and I’m wondering if I cook them the same. The are smaller but thicker. Does 3-2-1 still apply? What difference am I going to see with the finished product?

    Mine typically cook about 1 hr less than the St. Louis, ends up being a 3-1-1 most times. Just check em really good while they’re in the foil is my advice.

      Typically go with a 2-1-1 on baby back ribs.

        I do 3-1-1. 3-2-1 steams them too long and they come out tasting flat and washed out.

                I will eat a Whataburger if I cant find my St Louis Ribs.
