    It may just have soaked long enough before I see it that I didn’t realize it was a dry rub. Looks like red food died meat every time I’m there. Thanks for the quick responses guys. I’ll buy some of that seasoning.

            Mango juice, just don't marinade to long.....the meat will fall apart.

                    There's a mango paste as well that is the best tenderizer I've ever seen. Like you said if you forget it the meat will literally break down to mush

                            You should be able to find achiote in any Grocery store in the Mexican section. Any Mexican meat market will have it also.

                                Those paste have far to much sodium in them.
                                Just make your own fresh with some guajillo chiles. Pretty easy to do. I have a recipe.
