    Smoking a whole hindquarter Question.

    At 225 how long would a small deer hindquarters take.

    Are wanting to slice like brisket or pull/chop it ?

      160* internal is done. Always smoked mine as I would beef.

            Depends on what you want the end product to be. I’ve done them for 4 hrs on the smoker, put in a foil pan, add butter and some beer, cover with foil then either back on the pit or in the oven until fork tender. Usually 6-8 hrs total...but the ones I did were pretty good size.
