Guys...looking to make some homemade pepperoni. I dont have time to cure and do it like a dried sausage so i know it might turn out a little different but so far i have figured that most recipes call for:
1 lb meat
1 tablespoon of Mustard Seed
1 tablespoon crushed fennel seed
1 tablespoon red pepper
1 tablespoon paprika
1 tablespoon sugar
1 tablespoon garlic
1 tablespoon black pepper
1 tablespoon anise seed (hopefully can get at wally world)
1. tablespoon of morten tenderquick
anyhow if anyone knows of anything else I missed let me know..THANKS!
