Well done Skloss, Erin, Rascal Arms, Justin and whoever else helped man Team Fajita. A nice breath of fresh air added to Bownanza teams in a year of team dropoffs. Great job and excellent food. Big thanks to Erin for bringing fajitas to us chicken saucers in the "heat of the battle"! You are the greatest!

For those asking about the fajitas, I get them from William George Co, Inc. It's a foodservice distributor based out of Lufkin.

They have 3 locations:
Lufkin 936-634-7738
Palestine 903-729-2211
Texarkana 903-838-8527

Just ask for the pre-marinated fajitas. They come frozen in 10lb cases. 2 5lb bags per case. The brand name is Carl's.

Word of advice... if you want them tender and juicy, don't cook them past medium. If you cook them too long, they'll dry out and get tough just like any cut of beef.

We hit a homerun! Huge thanks to John's daughter as well. She was a big help prepping the peppers/onions and wrapping the tacos.

I'll burn meat with Justin any day! We did our fair share of QC taste testing. Especially some of the medium-rare stuff that was kicked back to us from the sous chefs.

Those sous chefs need to listen to the executive chefs more.
Waukobe makes good fajitas.

Not only did we burn meat all day we didn't start any fires . We had plenty of Miller lite to extinguish a fire if needed.

Hey now....Erin and I just didn't want the Mayor to be sued for a case of Ebola with some of the stuff y'all were throwing at us.

And I agree both John and his daughter were very helpful as noted. I believe her name is Lindsey?

Thanks again everyone. It was a big success with good folk and GREAT grub!

That's what the shine is for! To kill all that stuff! I'll admit some of it was a little on the rare side, but it sure tastes good.

I had fun helping out! I feel like I end up standing around looking for something to do with the wings since I don't help grill so it was nice to have consistent work and fellowship this year. And those steak roll ups were the bomb! I'm sad I was too full from quality control to eat more of the peppers and salsa!

I'm going to add some leg extensions to my table next year so we don't have to bend over so much. It's a great idea that I didn't think of until I was bent over slicing peppers.

Man, that would have been nice! Electric knife for meat and taller table. Don't forget these change orders for next year.

Oh we'll see what we can do. I hope to have a cordless knife way before then. This was my 6th or 7th time to cook that volume of fajitas, and I've said I'm going to buy one every single time!!
