    Offset smoker or insulated cabinet smoker?

    I’m in the market for a new smoker and cannot decide between the offset stick burner or an insulated cabinet smoker. I have been looking at the ones Lone Star Grillz sell and they seem to be top of the line. I would like to hear some feedback on the insulated smokers if anyone on the green screen has one. I have a Kamado Big Joe and love but I can’t cook the volume that I need to cook at times. Any and all feedback is appreciated.

    Both of those smokers have advantages and disadvantages. IMO the off-set smoker is going to produce a better product, but it is a lot more time consuming than an insulated cabinet smoker. I have 2 off-set smokers and I have to babysit them, but they turn out a great product.

      I have several offsets and a lone star grillz IVC. The IVC is great for overnight cooks pretty much set and forget. I have run it on just a little lump and the rest wood and it tastes pretty close to an offset. If you do a lot of long cooks it is the way to go.

        Really comes down to how much you enjoy babysitting the fire. I’ve had several of both... I’m at a point in life where I’m just too busy most of the time to sit and tend a fire.

        But with a IVS, I can throw on a brisket and cut the grass, run a few errands, run the boy to practice or whatever. Never could do that with a stick burner. Yes, the product is ever so slightly better from the later, but imo it’s negligible at best.

          Buy a pellet grill. Set your temp. Go to bed and get a full 8 hours. I have a friend on a competition bbq team who swears by the pellet smoker.

            Wow, I cooked competition 25 years ago and bought a pellet grill 2 years ago and can’t get close to a brisket that compares to an offset smoker. I would like to know what pellet grill and tricks he uses. Not saying he can’t get good product off the PG, I’ve never been able to on a brisket.

              Brand of pellets make a huge difference and usually on long smokes adding some additional smoke will help. Some use a smoke tube or similar and some place wood chunks directly on the deflector plate. I know of several people that use pellet smokers in competitions and do very well.

                Thanks for the info on the wood chunks on the deflector plate, I’ve got a smoke tube and it does help.

                  I’m a huge fan of the offset, seems to be a good thing for me to have an excuse to just relax and watch a fire all day.

                    I've had the exact same experience. I used to have a Jambo and now I have a Traeger. I even use the big smoke tube. It's not a comparison. The Traegers are very convenient and cook well but an offset is a different animal.
