    with shower and cooking, you will have a condesation problem at the ridge on the bottom of the roofing and insulations. without an attic, there is no place for the moisture to go. consider some type of ridge vent. i built hundreds of cabin shells in the past and saw many people finish them without ventilation. some became so wet that they thought the ridge was leaking. when we removed the shingles the deck would be wet about 18" down on both sides of the ridge.

              Thanks for the heads up we do have a vent for the bathroom and I will definitely consider one for the kitchen now. Do you think it's necessary since we do not a have a stove just a hot plate?

                      anything that produces steam will be a water vapor issue in cold weather. it will raise thru the insulation with heat and collect on the cold metal (roof panel)
