Default Mushroom Stuffed Backstrap

I made this for Coach a while back because he loves mushrooms. It was really good, and I don't even really like mushrooms!

What are your thoughts on mushrooms?

That looks great!!! I would say mushrooms are one of my favorite foods to cook with. Most people just think of the common white button mushroom or portabella mushroom but there are so many more out there that taste better. If you ever shop at the Asian market you will see they carry many different varieties like enoki, miatake and seafood mushrooms. As an avid forager i eat a few of the edible varieties that grow around here like honey mushrooms, milk caps and oysters. Here is a few pics of the mushrooms we have picked.

I would add spinach to it also. I will beat the backstrap very thin, place everything on top and roll the back strap back up to get a pinwheel effect. Then it gets wrapped with thin cut cheap bacon and seared very well.
